Cordials Made with Great Care, by Atelier Café Bar Seihei

Recently, cordials are getting increasingly popular. Many of you may be thinking, “I’ve heard of it but I’ve never had it before.”
Cordial is a syrup made by marinating fruits and herbs, and you can enjoy them mixed with water or drizzled on top of your yogurt or ice cream…In Europe, where some herbs are considered to be medicinal, some cordials are made as popular home remedies.
Atelier Café Bar Seihei in Nakijin Village in the northern region of Okinawa Island offers cordials made with ingredients that grow right here in Okinawa. Seihei offers hand processed goods and in the evenings, you can enjoy their original dishes based on regional French cuisine. What’s more, you can also stay at their connecting lodge (limited to one group per night).
The ingredients for their cordials slightly change by season, but they always contain Okinawan peppers, Karaki leaves grown in Ogimi Village, and other plants and herbs that grow in the garden at Seihei, like ginger lilies, cobbler’s pegs, mulberry leaves, and Okinawan ginger. In the recent batch of cordials, there were also Okinawan grown lemons, local citrus fruits (Shikwasa, Oto, early harvest Tarugayo), cane sugar, brown sugar from Tarama Island, honey from Motobu Town, holy basil, spearmint, cloves, cinnamon, chamomile, fig leaves, lemongrass, fennel, cardamom, Miyako Island’s Yuki Shio salt, and others. These ingredients grow under the strong rays of the Okinawan sun and are overflowing with life, adding a highly aromatic and flavorful taste to the cordials.
The cordials by Seihei have no artificial additives like food coloring, preservatives, nor fragrances. The maker, Ryosuke Kanai, talks about how he places great importance on inspiration and intuition in his daily life. He puts his whole heart throughout the whole production process, beginning with harvesting of the ingredients, placing them in jars, and sending them out to the world. “People on the receiving end will always feel the care and heart that went into creating something,” he says. The cordials made with such tender loving care by Kanai-san are simply exquisite; complex and delicate, while the gentle stimulus in taste lasts on your palate, and once you’ve tasted it, you won’t forget how great it is.
Mix one to two tablespoons of cordial with four to five parts of water or carbonated water. Some of the feedback he’s gotten from his customers include comments like, “I felt my whole body warming up”, “my digestion improved and I got my appetite back”, “I’m able to sleep better”, and “I felt the soothing, relaxing effects after drinking it”.
