Okinawa Brown Cane Sugar Soup Curry

In Shuri, Naha there is Ajitoya, the original Okinawa brown cane sugar curry restaurant.

The light of the sun and the colorful red and green interior give off the feeling an exotic land somewhere and lifts the spirits.

One the other hand, the nonchalant placing of the sanshin, sanpa and local liquor lets you feel the Okinawaness.

The pride and joy of Ajitoya using the brown cane sugar in the bouillon made from pork bones and chicken carcass from Okinawa and plenty of vegetable. It has a rich, mellow taste that is superb.  

Among the 10 types of soup curries I like to introduce my recommendation cartilage soki (pork spareribs) curry.

The cartilage soki is vacuum cooked until the bone is soft! It is so soft you can cut it with a chopstick. It has such a great matching with the curry, the delicious taste will make you will scream for more topping with out thinking about it.

The use of yamuchin plates and bowl with the seasonal Okinawan vegetable is vibrant and will pique your appetite. On that day there was goya (bitter melon) and fried island leeks.


 
You can choose the spiciness of your soup from 1 to 100. Since the spiciness is added later, the heat is moderate when you order and so if you split it with a child you can still adjust the heat. The turmeric rice made with turmeric from Okinawa is bottomless.

I recommend having the hibiscus lassy with the soup curry. The sweet and sourness from the shikwasa is the special quality.
