A Superb Grill Skewered Shop in Chatan that Perfectly Fuses the Delicate Taste of Kyoto and Local Poultry of Okinawa

Hidden away on the second floor of a housing complex there is grilled skewered restaurant called “Tsuki to Utsuwa”. It is a bit hard to find, but whether it is a weekday or the weekend, the popular hide away is lively with foreigners, locals and tourist.
 
The Ryukyu plaster walls and Ryukyu glasses lamps gives the shop interior a warm refined atmosphere that a first glance would not seem to be a grilled skewer restaurant. The utsuwa (dish) in the name refers to the yachimun and Ryukyu glass, that the owner gathered on once in lifetime chance meetings potters of yachimun and makers of Ryukyu glass.  

Ishii, the owner, is from Kyoto and studied at a yakitori shop in Kyoto for three years then moved to Okinawa.
He learned the taste of Ryukyu at an Okinawan izakaya for one year and then openned Tsuki to Utsuwa

He takes really fresh local poultry like Yanbaru spring chickens and Ie Island ducks and while using a fan and charcoal tongs to change the flow of air, he grills each skewer properly. “The way of cooking changes with the squareness of the charcoal, the way it is lined up and the timing. Charcoal is a living thing.”   

 He pays a lot of attention to local poultry and now is planning a new way of producing local poultry with local highs and social organizations.

He orders seasonal vegetables from a contacted farm in Kyoto and has a fine selected line up of sake, both of which are attractive.  
 

The shop mainly uses local salts like Nuchimasu and salts from Yagaji and and then orders selected salts from all over Japan to mix and match the salts to the ingredients.

 “It is so subtle that you might not pay attention but I think it says with the five senses.”

It is a famous hidden shop that fuses the delicate taste of Kyoto with the wonderful ingredients of Okinawa, so come and enjoy a luxurious grown-up time.
