“TE＋TE pantry” in Nago City is an antenna shop of “Next Stage Okinawa Limited Liability Company.” The shop deals in processed products using ingredients in Okinawa.
“We would like to give Okinawan products from hand (TE) to hand (TE).”
Their wish became the name of the shop.
I introduced “Peanut Paste” in Okinawa CLIP, and this time I would like to introduce you “Papaya Shiri Shiri,” which is low-temperature dried.

By the way, “shiri shiri” is an Okinawan dialect meaning “to shred.” It also means a tool to shred vegetables such as a slicer. So “Papaya Shiri Shiri” means shredded papaya.

This products is made by using papayas cultivated in their own farm.
After harvesting papayas, they peel them when they are fresh, soak them in water to remove the scum.
After that, do the “shiri shiri (shredding)” and dry them at low temperature of 55℃ in order not to destroy enzyme contained in papaya.
Slightly orange ones are a little matured papayas. The characteristics of “Papaya Shiri Shiri” are additive free, color free, and natural color of papayas.
Before you eat, soak them in lukewarm water for 15 to 30 minutes, and they absorb water and expand. They become 3 to 5 times bigger than before, and crispy again just like fresh ones. As they have been already soaked, you don’t have to remove the scum. How convenient they are!
“I would like young children in Okinawa to eat papayas more,” said Ms. Keiko Kinjo, the president of Next Stage Okinawa Limited Liability Company.
The number of people who hate doing the shiri shiri for papayas because it is troublesome.
How can people eat papaya easily? Then, this idea came up.
“In Okinawa, mothers after baby delivery used to eat papayas because it has been said that papayas help them to make more milk. Papayas go well with oil, so it tastes good when you stir-fry them with pork or canned tuna flakes.”
“I would like to pass down ingredients unique to Okinawa and food that have been loved by the local people to the future generations.”
There was Kinjo-san’s strong passion behind the birth of the Papaya Shiri Shiri.
Not only the local residents but also tourists are pleased with the Papaya Shiri Shiri as a souvenir.
After soaking them in water, all you need to have is leaf vegetables and mini tomatoes. Colorful salad will be ready in a blink of time.
If you stir-fry them with tuna, carrots, and Chinese chive, “Papaya Shiri Shiri (stir-fried papaya,” not “Ninjin Shiri Shiri (stir-fried carrots) will be ready!
Very easily you can reproduce the taste of Okinawa.
