With A Light Yanbaru Chicken Broth

Generally, Okinawa soba use a bonito broth, but here at “Tori Sobaya Ishigufu”, in the northern part of Okinawa in chickens raised locally in Yanbaru are slowly simmered to make the broth. 

The soup while being light is full bodied and the saltiness stimulates the tongue. The soba noodles are homemade.  The body of the noodle and the springy texture of the soup are a perfect match. I recommend the “Tokusen Soba”, which has fragrantly grilled chicken thigh meat and soft chicken breast seasoned with salt and pepper as a topping. It is light but it packs quite a punch.

To finish I recommend the “Onsen Tamago Kake Gohan”. You can cover half with a little a bit of soy sauce and eat it like that and the rest you can pour the rest soup of to make it like ochazuke. The prices start from a surprising 100 yen! The soba also comes in three sized large, medium and small, which will leave you complete satisfied.

Ishigufu, was started in Nago and has 6 shops on Okinawa Island and 1 shop on Ishigaki Island for a total of 7 shops. Each shop has its own speciality dishes and broths, like Agu (a type of Okinawan pig) broth and bonito broth. So try to find your favorite shop!
