July is the season of the suku.
Suku in Okinawa is the name of the fish called Aigo.
It is popular fried, as sashimi with vinegar soy sauce and the sukugarasu (entrails fermented with salt and rice).
There is a particular point of care when eating raw suku. It has to be eaten from the head, otherwise you can prick yourself with the bones and fins.
However it is said to be tasty enough to make people eat it n spite of that and it is popular with all ages in Okinawa.
